1 cup pure grape juice
1 over-ripe pear
Juice of 1 pomegranate
5-6 plums (enough to equal 2 cups)
Run fruit (minus grape juice) through a food strainer.
Pour 5 1/4 cups sugar into a bowl.
Combine grape juice with other fruit to equal 3 cups total.
Follow recipe for Sure Jell grape freezer jam:
5. "Stir sugar into prepared fruit juice. Mix well; Let stand 10 minutes; stir occasionally.
6. Stir in 1 box of pectin and 3/4 cup water in small saucepan.
7. Stir pectin mixture into fruit juice mixture. Stir constantly until sugar is completely dissolved and no longer grainy, about 3 minutes.
8. Pour into prepared containers, leaving 1/2 inch space at top for expansion during freezing; cover.
9. Let stand at room temperature 24 hours until set. Refrigerate up to 3 weeks. Otherwise, store in freezer for up to 1 year. Thaw in refrigerator. "
I was trying to use all of my bountiful basket and not waste one thing. Came up with this one and the color was so absolutely gorgeous. A very sweet, tasty jam. My kids have even given up homemade strawberry jam for this one and trust me, with my picky eaters, that is saying something.
The pomegranate's were a huge pain to run through the strainer, so I will probably leave them out next time.
