Honey half white/half wheat bread

6 and 1/2 cup white flour (not all-purpose)
4 cups ground wheat flour
3 Tablespoons yeast
1 Tablespoons salt
1/2 cup honey
*4 dime size squirts of liquid lecithin
4 to 4-1/2 cups warm water

In a standing mixer give dry ingredients a quick whirl.  Add lecithin, honey and water. (Start with four cups, add more if it looks too dry. No more than 4 and 1/2)
Mix for 5 minutes.
Shape dough into four loaves and spray pans with Pam.
Let raise for 25 minutes under a covered towel and then bake for 25 minutes at 350 degrees.

*Lecithin is so sticky and messy you have to squirt it right into the bowl. It just won't work if you try to measure it.

This is just a Pantry Secrets version that I modified. 
Pantry Secrets suggests 4 cups water, but I find I ususally need more. It helps to let it mix for a minute then take a look in the bowl. If you see lots of flour and white spots, pour a little more water in. I usually watch the sides of the bowl and when I see that wet dough on the sides of the bowl, I know I'm there.
